This coffee comes from Finca Santa Elisa, an estate spanning 1250 acres at the base of Volcan de Fuego an active stratovolcano in Guatemala, on the borders of Chimaltenango, Escuintla and Sacatepéquez departments.
Only ripe cherries are picked and then processed on-site at The Finca Santa Elisa Micro Mill, enabling superior post-harvest quality control.
Following 18 to 24 hours of fermentation, the coffee is washed in canals, separating and removing less dense seeds. The coffee is then dried using a combination of sun drying on patios and raised beds and mechanical dryers in order to meet strict moisture parameters for this coffee.
